Heterologous Production and Characterization of Rapeseed Procruciferin Isoforms for Sustainable Food Protein Development

Cruciferin, a key seed storage protein in rapeseed, holds promise as sustainable food proteins. We systematically expressed six isoforms in E. coli, successfully producing three (Cru‐1, Cru‐A, Cru‐2/3A) in soluble form. These were purified and characterized with regard to stability and assembly state.
