In this study, three Pistacia species, Pistacia terebinthus, Pistacia khinjuk and Pistacia vera fruits were worked out. The moisture, ash, cellulose, protein and oil content, fatty acid composition, phenolic content, antioxidant activity and color properties of fruits were investigated.
