Gentiobiose and cellobiose content in fresh and fermenting cucumbers and utilization of such disaccharides by lactic acid bacteria in fermented cucumber juice medium

Lactobacillus pentosus and Lactobacillus plantarum can remove the disaccharides cellobiose and gentiobiose during a cucumber fermentation if the pH is above 3.7, enhancing the completion of the bioconversion. The disaccharides were not detected in fresh and fermented cucumbers.
