The effects of high‐pressure, enzymatic, and high‐pressure‐assisted enzymatic treatment on the properties of soluble dietary fibers and their use in jelly prepared with grape waste extract

open access: yesJournal of Food Science, Volume 88, Issue 12, Page 4962-4973, December 2023., 2023
Abstract This study aimed to investigate the physicochemical attributes of soluble dietary fibers (SDFs) of grape, which were isolated after enzymatic (using cellulase [0.1 MPa/60°C/30 min]), high‐pressure (HP) (100 MPa/60°C/30 min), or HP‐assisted enzymatic treatment (using cellulase [100 MPa/60°C/30 min]), then to evaluate textural properties, color,

The efficacy and safety of high‐pressure processing of food

open access: yesEFSA Journal, Volume 20, Issue 3, March 2022., 2022
Abstract High‐pressure processing (HPP) is a non‐thermal treatment in which, for microbial inactivation, foods are subjected to isostatic pressures (P) of 400–600 MPa with common holding times (t) from 1.5 to 6 min. The main factors that influence the efficacy (log10 reduction of vegetative microorganisms) of HPP when applied to foodstuffs are ...

The low‐field NMR studies the change in cellular water in tilapia fillet tissue during different drying conditions

open access: yesFood Science &Nutrition, Volume 9, Issue 5, Page 2644-2657, May 2021., 2021
With the progress of drying, the surface and core temperature of the tilapia fillets continues to rise which leads to the decline of free water content, in addition, it was found that the free water is the highest when cell membranes started to rupture by the low‐field nuclear magnetic resonance technique.
