, 2018 Los mezquites son arboles extremofilos presentes en regiones áridas del estado de Oaxaca, abundantes y poco aprovechados. A partir de las vainas de mezquite se pueden obtener harinas de interés para el consumo por personas con padecimiento de enfermedad celiaca. Además, de que las vainas poseen un alto valor nutritivo.
