Texture‐Taste Interactions: Exploring the Effect of Thickener Concentration on the Sensory Perception of Sweet, Sour, and Salty Tastes

Thickened beverages reduce the risk of aspiration but negatively impact taste perception. This study found that adding xanthan‐gum‐based commercial thickener significantly decreased sweetness, sourness, and saltiness perception, though viscosity and tribology did not explain the reduction in taste ratings.
