Characterization of Rice Cake with Ramie (Boehmeria nivea L.) Leaf Extract

Ammonium sulfate를 이용하여 모시잎 추출물을 얻은 후 추출물의 첨가량을 0~30%로 달리하여 떡을 제조하고 경도의 변화와 항산화 특성을 비교하였다. 박층크로마토그래피 결과와 HPAEC 결과 모시잎 추출물에는 전분을 maltose 단위로 가수분해하는 β-amylase가 존재함을 확인하였으며, 모시잎 추출물의 첨가량을 달리하여 떡을 제조 후 4°C에서 5시간 저장한 다음 비교한 조직감 측정 결과, 모시잎 추출물을 10% 또는 20% 첨가한 떡의 경도는 대조군의 약1/2수준, 30% 첨가한 떡은 대조군의 1/3 수준을 보이며 노화지연 효과를 보였으며 이러한 경향은 24시간 저장 시까지 계속되었다. 시차주사열량계로 측정한
