Combined Effects of Cutting Orientation and Frying Techniques on the Physicochemical Properties and Quality of Fried Sweet Potato (Ipomoea batatas) Chips

This study examined how cutting orientations affect fried sweet potato quality. Transverse cuts, especially with shallow frying, showed reduced oil absorption, higher antioxidant activity, and better nutrient retention. Deep frying used less energy overall, whereas sensory tests favored shallow‐fried longitudinal cuts.

Sensory Perception and Physicochemical Characteristics of Geisha Coffee From Different Production Zones in Panama

No significant differences based on main physicochemical parameters. Significant aroma/flavor differences of coffee Panama geisha coffee from Boquete, Tierras Altas and Renacimiento were found. Sensory differences support the existence of regional terroir.
