iMetaMed, EarlyView.Using a 2% salt diet and a 10‐month feeding to model chronic human sodium exposure, we found that black rice improved glucose tolerance and short‐chain fatty acids, but 2% salt inverted black rice's blood glucose benefits. White rice + 2% salt treatment uniquely increased short‐chain fatty acids.
