Evaluation of Food Safety Practices and Microbiological Quality of Street Foods in Marrakech, Morocco

This study evaluates hygiene practices and microbiological quality of street foods in Marrakech. Among 224 samples analyzed, 21% were non‐compliant with Moroccan safety standards, with contamination dominated by fecal coliforms (40%) and Escherichia coli (28%).
