In this study, the use of Limonium vulgare Mill. plant and stevia, which has never been used in rice pudding, was discussed. The research demonstrates that it is possible to develop a product that can cater to all dietary preferences, even when using vegan ingredients, provided that the necessary sensory attributes are met.
