Gelation of sodium alginate in a batch process
Chemical Engineering Science, 1991Abstract A physical diffusion model is given in the present study for describing the reaction system involving sodium alginate and calcium lactate. The gelation system is characterized by a moving gel front which renders the problem highly nonlinear. The physical model is numerically solved to predict the speed of the moving gel front.
