Valorization of Pineapple Peel and Mature Coconut Water to Produce Vinegar
Pineapple peel waste and mature coconut water were utilized as low‐cost substrates for vinegar production through a two‐stage fermentation process. During alcoholic fermentation, sugars in the substrate were converted into ethanol by Saccharomyces cerevisiae.

Industrial manufacturing processes have transformative effects on the components of food matrix. These transformations in food matrix and components have direct implications for quality assurance (QA), food quality (e.g., nutritional profile and texture), and food safety management (e.g., pathogen control and toxin mitigation). ABSTRACT This systematic

Potassium availability in soil, potassium uptake and effects on the pH of musts and wines
The pH values of South Tyrolean musts and wines are high in most years. The high pH values are not only related to the low content of organic acids of the grapes at maturity, they are also the result of high potassium levels in the must. It should therefore be examined whether vineyards with low potassium uptake would produce musts with lower pH-values

The Preparation of Novel Fluorenes Inspired by Hipposudoric Acid
In this research we report on the design and synthesis of a series of fluorene‐based derivatives loosely inspired by the tricyclic framework of hipposudoric acid. Preparation of sixteen novel N‐alkylated derivatives was accomplished via a series of concise one‐step amide N‐alkylation reactions.
