Food Sci Nutr, 2019 The reaction mechanism between glutaraldehyde (GTA) and gelatin was adjusted by pH. pH affected mechanical properties, thermal stability, and triple helix content of the gelatin films with GTA. An optimum pH was around 4.5 in gelatin films cross‐linked by GTA to improve the physical properties of gelatin films.
