Starch Selection in Sweet Food Systems: A Texture‐Driven Framework Across Confectionery and Dessert Matrices

open access: yesJournal of Texture Studies, Volume 57, Issue 5, October 2026.
Starch functions as a key hydrocolloid shaping texture and stability in the formulation engineering of sweet foods. Sugar‐starch hydration interactions control gelatinization and rheological behavior. Modified starches enhance tolerance to heat, shear, acidity, and low moisture, and starch‐hydrocolloid blends enable tailored textures and improved shelf

Microring Resonator Dispersion Metrology With Neural Networks

open access: yesNanophotonics, Volume 15, Issue 17, 11 September 2026.
We present a machine learning framework for inverse and forward characterization of microring resonators, inferring geometry and material dispersion from sparse spectral data. The approach achieves nanometer‐scale accuracy and > 99% material identification, while reconstructing full dispersion spectra.

Reconfigurable Terahertz Multi‐Harmonic Dual‐Combs

open access: yesNanophotonics, Volume 15, Issue 17, 11 September 2026.
Terahertz dual‐comb spectroscopy requires precise control of repetition frequencies. A reconfigurable dual‐comb system is realized on a single self‐detected quantum cascade laser platform, where harmonic order serves as a new tuning parameter. Switching among fundamental and harmonic states enables flexible multi‐heterodyne down‐conversion without ...

Experimental and Computational Investigations of Surface Polaritons at Metal‐Oxide‐Semiconductor Interfaces

open access: yesNanophotonics, Volume 15, Issue 17, 11 September 2026.
STEM‐EELS and full‐wave FDTD reveal electron‐driven surface‐polariton modes at buried Au/oxide/Si interfaces with 10 nm SiO2 or Al2O3 spacers. Extinction is dominated by non‐radiative absorption, while oxide permittivity shifts the resonance and controls evanescent‐field penetration across the spacer into silicon.

Integrated Sensing and Communication in a Fiber‐Wireless System With Time‐Phase Synthesis Dimension Waveform

open access: yesNanophotonics, Volume 15, Issue 17, 11 September 2026.
A unified fiber‐wireless integrated sensing and communication system is enabled by a single microwave photonic platform with a time‐phase synthesis dimension waveform. This architecture simultaneously delivers high‐speed data transmission, high‐precision wireless ranging, and accurate fiber diagnostics over a high‐power analog radio‐over‐fiber link ...
