In an aqueous alkaline medium, fatty acids (from the hydrolysis of triglycerides or freely present in the oil) are ionised in order to form emulsifiers (carboxylates) which will physically stabilise the prepared emulsion. The higher the free fatty acids content of the oil and alkalinity of the solution, the higher will be the stability of the prepared ...

Environmental Risk Limits for mineral oil (Total Petroleum Hydrocarbons)
In this report maximum permissible concentrations and serious risk concentrations are derived for mineral oil (total petroleum hydrocarbons). The used method is based on a fraction analysis approach, in which aliphatic and aromatic compounds are regarded separately and are both further divided into different fractions.

The essential oils of Piper nigrum show marked chemical and biological variation across fruit maturation stages. Ripe fruits yield oils with the strongest antioxidant and cytotoxic activities, demonstrating that maturation directly modulates volatile composition and enhances the bioactive potential of this aromatic species.

Functional and physicochemical properties of proteins isolated from four different pulses
Proteins from four pulses viz. pinto bean, cow pea, pigeon pea, and navy bean were isolated and characterized. Pinto bean protein showed the highest oil absorption capacity and solubility. Pinto bean protein exhibited the highest emulsion capacity and foaming capacity. Cow pea protein showed the highest in vitro protein digestibility.
