Abstract This study examines the bioactive properties and quality of commercial carob molasses, commonly consumed by children in Turkey for tonsillitis relief, while highlighting potential risks. Total phenolic content was analyzed spectrophotometrically, and phenolic acid composition by high‐performance liquid chromatography (HPLC).
