Investigation of Phenolic Composition and Antioxidant Capacities in Selected Turkish Indigenous Wheat Varieties

The study investigated the phenolic composition, ash contents, and antioxidant capacities of 18 Turkish indigenous wheat varieties. Results showed that dicoccum genotypes have the highest soluble free and conjugated phenolics, while aestivum is rich in insoluble bound, total phenolic, and total flavonoid contents.
