The effect of pomegranate peel extract added as a natural preservative on the quality parameters of thornback ray (Raja clavata) sausages stored at +4°C

Sausage obtained from thornback ray (Raja clavata) was functionalized with pomegranate peel extract. Pomegranate peel extract added sausages gave better shelf‐life values than the synthetic antioxidant (ascorbic acid) added sausage.
