Sausage obtained from thornback ray (Raja clavata) was functionalized with pomegranate peel extract. Pomegranate peel extract added sausages gave better shelf‐life values than the synthetic antioxidant (ascorbic acid) added sausage. Pomegranate peel extract extended the shelf life of sausages by 7 more days.
