普通醤油中の有機酸は1%内外であり, その内揮発酸としては約1割の0.1%を占めており, その主体となつているものは乳酸と醋酸である。白醤油中の不揮発酸もやはり大部分は乳酸である事は先に報告した。その他現在迄醤油中に存在が認められている揮発酸としては蟻酸, 酪酸, プロピオン酸, バレリアン酸, カプロン酸等であり, その大部分はエステルを形成し醤油香気の一大要素となつている事は良く知られている事である。試みに白醤油中の総エステルを測定してみると酷酸エチルとして1%~1.5%(アルデヒド・糖等の影響があるが) と非常に多量存在する事が解つた。これが白醤油の香気に関係している事は前述の如くであり, それについては何れ検討する事として今回は揮発酸について-, 二の試験を行い一応の結果を得たので報告する。
