Pathway of 5-hydroxymethyl-2-furaldehyde formation in honey [PDF]

open access: bronzeJ Food Sci Technol, 2019
5-hydroxymethyl-2-furaldehyde (5-HMF) is an important substance that affect quality of honey and shows toxicity for humans and honey bees. The pathway of 5-HMF formation in honey is still unknown. In this study, we tested the effect of thermal treatment (at 90 °C for 4 h) on the formulation of 5-HMF formulation in rapeseed with varied honey composition.

Wild rodents seed choice is relevant for sustainable agriculture [PDF]

open access: yesScientific Reports
Mitigating pre-harvest sprouting (PHS) and post-harvest food loss (PHFL) is essential for enhancing food securrity. To reduce food loss, the use of plant derived specialized metabolites can represent a good approach to develop a more eco-friendly ...

Exploration and Improvement of Acid Hydrolysis Conditions for Inulin-Type Fructans Monosaccharide Composition Analysis: Monosaccharide Recovery and By-Product Identification [PDF]

open access: yesFoods
Acid hydrolysis serves as the primary method for determining the monosaccharide composition of polysaccharides. However, inappropriate acid hydrolysis conditions may catalyze the breakdown of monosaccharides such as fructans (Fru), generating non-sugar ...

Laboratory characterization of furan, 2(3H)-furanone, 2-furaldehyde, 2,5-dimethylfuran, and maleic anhydride measured by PTR-ToF-MS [PDF]

open access: goldAtmospheric Measurement Techniques
Furanoids are significant contributors to volatile organic compound hydroxyl radical reactivity in biomass burning emissions, yet their accurate measurement using proton-transfer-reaction time-of-flight mass spectrometry (PTR-ToF-MS) remains challenging ...

An Extrinsic Optical Fiber Sensor Probe with Micrometer Size via a C-Shaped Waveguide with a Core of MIP [PDF]

open access: yesSensors
Optical–chemical sensors based on optical fibers can be made in reflection or transmission schemes. In the reflection scheme, the sensing area is typically present at the end of the fiber, and the light source and the detector are placed on the same side
