Molecular Nutrition & Food Research, 2011Abstract5‐Hydroxymethylfurfural (5‐HMF) as a product of the Maillard reaction is found in many foods. Estimated intakes range between 4 and 30 mg per person and day, while an intake of up to 350 mg can result from, e.g., beverages made from dried plums.

Applied Microbiology and Biotechnology, 2000The physiological effects of 5-hydroxymethylfurfural (HMF) on Saccharomyces cerevisiae CBS 8066 in the presence and absence of furfural were studied. Experiments were carried out by pulse addition of HMF (2-4 g/l) as well as HMF (2 g/l) together with furfural (2 g/l) to batch cultivations of S. cerevisiae.

The Formation of 5-Hydroxymethylfurfural from Hexoses
Australian Journal of Chemistry, 1963Gas chromatography has been used to demonstrate the existence of the equilibrium; fructose, during the conversion of fructose, free from glucose, into 5-hydroxymethylfurfural under conditions of acid catalysis. The relationship of this equilibrium to subsequent stages in the conversion is discussed.

Selective Electrogenerative Oxidation of 5‐Hydroxymethylfurfural to 2,5‐Furandialdehyde
ChemSusChem, 2017Abstract2,5‐furandialdehyde (DFF) was synthesized by electrogenerative oxidation of 5‐hydroxymethylfurfural (HMF) over a PtRu catalyst with 89 % selectivity at 50 °C after 17 h. This approach opens an avenue for a selective, energy‐efficient and green oxidation of biomass‐derived platform alcohols to added‐value chemicals.
