Staphylococcal biofilm formation as affected by type acidulant

Staphylococcal growth and biofilm formation in culture medium where pH was lowered with weak organic (acetic and lactic) or strong inorganic (hydrochloric) acids were studied. The effects were evaluated by biomass measurements, cell-surface hydrophobicity, scanning electron microscopy (SEM), and confocal laser scanning microscopy (CLSM).

The Acidulant Properties of L‐aspartic Acid

SUMMARY Preliminary studies suggest L‐aspartic acid possesses acidulant properties of potential use in foods. Present costs are not competitive with citric acid, though special application may exist. The concept of using amino acids as flavoring materials is suggested, with a second role in improving nutritional quality.
