Žlahtnjenje kivija se izvaja z namenom izboljšanja okusa, povečanja pridelka, spremembe barve mesa kivija, dolžine obstojnosti in shranjevanja, prilagoditve na klimatske razmere ter uvedbe novih lastnosti. To nam omogoča predvsem poznavanje in uporaba ustreznih metod žlahtnjenja. Poslužujemo se tako standardnih kot biotehnoloških tehnik.
