La bagassa di maguey è il residuo fibroso ottenuto dopo l'estrazione dei succhi zuccherini dal cuore dell'agave [ananas] durante la produzione di mezcal e tequila. Si stima che per ogni litro di mezcal o tequila prodotto, vengano generati tra i 2 e i 5 kg di bagassa umida [Soto-Cruz et al., 2017].
