Abstract BACKGROUND This study investigates the production scale‐up of exopolysaccharide (EPS) by Ensifer meliloti SEMIA 135 from shake flasks to a 5 L bench‐scale fed‐batch bioreactor. Soybean molasses was the cost‐effective nutrient source. The primary aim was to improve conditions for maximizing EPS yield and minimizing production costs.

Functional Food Intervention Attenuates Obesity‐Induced Metabolic and Intestinal Microbiota Changes in Rats

Obesity is a multifactorial disease that functional foods may counteract. These foods can be a promising dietary strategy to reduce metabolic changes. Our study evaluated the effects of a bioactive food compound (BFC) against a high‐fat diet (HFD). BFC contains oat bran, flaxseed, and textured soy protein in a 2:1:1 ratio.
