Titanium dioxide replacement with inorganic alternatives for color‐masking of ferrous fumarate in double fortified salt

open access: yesJSFA reports, Volume 5, Issue 4, Page 128-139, April 2025.
Abstract Background Titanium dioxide (TiO2) has been widely used in food products, including gums, candies and in fortified salt as a white coloring agent of iron premixes. TiO2 (E171) was banned by the European Food Safety Authority in 2021, with potential carcinogenicity concerns. This study assesses the feasibility of using inorganic alternatives to

Growth Inhibition of Sodium Chloride Crystals by Anticaking Agents: In Situ Observation of Step Pinning

open access: yesCrystal Growth & Design, 2012
We have determined how the growth of sodium chloride crystals is inhibited by the anticaking agents ferrocyanide and iron(III) meso-tartaric acid. Using in situ atomic force microscopy, we show how steps flow on clean crystals and how the step flow is inhibited by the anticaking agents.
