Method of processing beta-glucan

The invention relates to a method of degrading plant- based ß-glucan into a controlled molecular size by hydro- lyzing ß-glucan in a closed space under pressure by means of an acid at an elevated temperature. The invention also relates to a degraded ß-glucan product.
