Development and Characterization of an Innovative Probiotic Fermented Beverage Based on Yerba Mate and Lychee Juice Using Saccharomyces boulardii

open access: yeseFood, Volume 7, Issue 4, August 2026.
Yerba mate allows the growth of S. boulardii. S. boulardii maintains viability even under refrigeration. Yerba mate beverage with added S. boulardii is delicious and has functional and probiotic potential. ABSTRACT This study aimed to develop a probiotic fermented beverage based on yerba mate (Ilex paraguariensis), lychee juice, and Saccharomyces ...

Bioaccessibility of Phytochemicals, Amino Acids, Antioxidant Capacity, and Enzyme Inhibitory Activities of Hawthorn (Crataegus spp.) Fruits Following INFOGEST Simulated Gastrointestinal Digestion

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
Comprehensive compositional and functional characterization of three Crataegus species demonstrated that simulated gastrointestinal digestion substantially altered the bioaccessibility of phenolic compounds and associated biological activities. The pronounced interspecific variation observed highlights the importance of species selection for the ...

The Gut Microbiome and Diet Interact to Dictate Personalized Response to Broccoli Sprout Consumption

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
The study investigated how diet, the gut microbiome, and their interactions influence the production of different types of sulforaphane metabolites, specifically bioactive (have health benefits) and inert (do not have health benefits). Mediation analysis explored these tripartite relationships.

Comparative Analysis of Chemical Composition and Bioactivities of Volatile Oils From Wurfbainia villosa Fruit and Stem

open access: yesFood Science &Nutrition, Volume 14, Issue 8, August 2026.
Volatile oils were extracted from the fruit and stem of Wurfbainia villosa by steam distillation, with yields of 1.87% for the fruit and 0.13% for the stem. GC–MS analysis identified 46 compounds in the fruit oil and 59 compounds in the stem oil, with 27 common components, 19 unique to the fruit, and 32 unique to the stem.
