This study investigated the effects of teff flour varieties and particle sizes on flour physicochemical properties and cookie sensory acceptability. Different teff varieties (Jitu, Bora, and Filagot) undergo milling and sieving processes to separate the flour into three distinct particle size categories: P1 = 260–360 μm, P2 = 160–260 μm, P3 = 90–160 μm.
