This process eliminates a primary precursor that contributes to the formation of acrylamideas shown in Graphical abstract. The majority of the amino acids are unaffected by asparaginase thereby limiting its effect on the quality attributes of food products.

Parameters energy in the industrial production of tannins of Caesalpinia spinosa kuntze (Tara)
For the production of tannins from Caesalpinia spinosa, the optimal values were determined: Raw material / extractant ratio: 1: 3; extraction time of 45 min and a leaching temperature of 70oC; the tannin concentration being evaluated by the modified permanganate method.
