Study on the Carcass Yield Grade of Hanwoo

Journal of Animal Science and Technology, 2005
Total number of 237 Hanwoos were purchased from the nationwide fanns based on the different market weights and sex. After slaughtering, they were evaluated to estimate the productivity of carcass components by the sex and market weight, and to predict the beef carcass yield grade equation. The main results in this study were summarized as follows; With

COMMERCIAL ACCELERATED PORK PROCESSING: YIELDS OF FRESH CARCASS CUTS

Journal of Food Science, 1979
ABSTRACT Accelerated pork processing, the processing of the pork carcass immediately following slaughter into primal and processed cuts, was studied under commercial packinghouse conditions using 225 market hog carcasses. The carcasses were selected at random from the slaughter operation and one side assigned to accelerated and the ...

Meat from Sudan desert sheep and goats: Part 1—Carcass yield, offals and distribution of carcass tissues

Meat Science, 1985
Twenty yearling, male Sudan desert sheep and a similar number of desert goats were used in the study. Within each species the animals were equally divided into two groups. Each group was randomly assigned to control or fattened treatment. The control group was slaughtered at the beginning of the experiment and the fattened group slaughtered after 60 ...

Predicting the yield and composition of mature cow carcasses.

Journal of Animal Science, 1997
Cow carcasses (n = 60) were selected based on conformation and external fat to develop more current and useful prediction equations for estimating yield and composition. Adjusted preliminary yield grade was highly correlated to percentage of the carcass as fat (.91), percentage fat in the total lean (.89), and percentage fat in the lean trimmings (.88)
