Abstract This chapter focuses on the chemical composition of pepper fruits, i.e. water, fixed (fatty) oils, steam-volatile oil, carotenoids, resin, protein, fibre and minerals, among others. The importance of these compounds in the nutritive value, taste, colour and aroma of pepper fruits are also discussed.
