Chitosan-based Maillard self-reaction products: Formation, characterization, antioxidant and antimicrobial potential

open access: yesCarbohydrate Polymer Technologies and Applications, 2022
In this work, new chitosan derivatives (CS1-CS6) were obtained by short-term hydrothermal treatment. The formation of chitosan derivatives occurred through two simultaneous processes: hydrolysis and Maillard self-reaction.

Peroxide chitosan derivatives and their application [PDF]

open access: yesChemistry & Chemical Technology, 2007
Via radical reactions of chitosan and 5-tert-butylperoxy-5-methyl-1-hexen-3-in peroxychitosanes with ditertiary peroxide fragments were synthesized. They can be used as macroinitiator and coemulsifiers for emulsion polymerization of vinyl monomers. Latex polymers obtained antibacterial properties.
