Abstract The food enzyme containing metalloendopeptidase (EC 3.4.24) and leucyl aminopeptidase (EC 3.4.11.1) activities is produced with the non‐genetically modified Aspergillus oryzae strain HBI‐POP01 by HBI Enzymes Inc. The food enzyme was considered free from viable cells of the production organism.

(1) CitrininはpH5.3以下の酸性側に於いて一段の還元波をしめし, pHの増大に伴つてその半波電位は陰電位に移動する.その限界電流はpH1~3の範囲で一定であり, pH3~5に於いて漸減する. (2) 限界電流に対する水銀溜の高さの影響を検討覧することによつて, 0.2NHCl中での限界電流は拡散律則であるが, pH4.2での限界電流には幾分kinetic currentが関与していることがわかつた. (3) 限界電流は電解液中のプルコール含量により著しく影響され,この現象はアルコール濃度の粘度に及ほす影響によつて説明できた. (4) ILKOVI〓式より計算すると, citrininの電極反応に与る電子数は1である.
