Factors That Affect the Accumulation of Strecker Aldehydes in Standardized Wines: The Importance of pH in Oxidation [PDF]

open access: yesMolecules, 2022
Strecker aldehydes (SA) can be formed in wine from the degradation of Strecker and, to a lesser degree, via the oxidation of higher alcohols. The objective of this article is to assess the magnitude of the differences introduced by wine compositional ...

An Index for Wine Acetaldehyde Reactive Potential (ARP) and Some Derived Remarks about the Accumulation of Acetaldehyde during Wine Oxidation [PDF]

open access: yesFoods, 2022
The amount of acetaldehyde accumulated during wine oxidation was very small, far less than expected. The existence of polyphenols specifically reactive to acetaldehyde was postuled.

Can aldehyde accumulation rates of red wines undergoing oxidation be predicted in accelerated conditions? The controverted role of aldehyde–polyphenol reactivity

open access: yesJournal of the Science of Food and Agriculture, Volume 102, Issue 9, Page 3869-3878, July 2022., 2022
Abstract BACKGROUND The accumulation of acetaldehyde and Strecker aldehydes during wine oxidation is detrimental to quality and often determines wine shelf‐life. Knowing in advance the specific tendency of a wine to accumulate these compounds would help decision making during winemaking.

Improvement of the adhesive capacity of SBR for footwear outsoles by surface activation and coating deposition with atmospheric pressure plasma

open access: yesPlasma Processes and Polymers, Volume 18, Issue 9, September 2021., 2021
The bond strength of styrene‐butadiene rubber (SBR)/polyurethane adhesive/leather joints was improved by using atmospheric pressure plasma to activate and coat the SBR. For coated, flat SBR, this improvement was due to a considerable increase in surface polar carbon–oxygen groups.
