Flavor Evaluation of “Hongyang” Kiwifruit From Different Cultivation Regions Based on Electronic Tongue Sensory Assessment and HS‐SPME‐GCMS Analysis

open access: yesFuture Postharvest and Food, EarlyView.
1) The samples from Liupanshui orchards in Guizhou province exhibited relatively higher levels of sweetness and sourness. 2) The most comprehensive aroma profile to date for ‘Hongyang’ kiwifruit was established. 3) Among the 15 differential volatile organic compounds (VOCs), (E)‐3‐octen‐2‐one and 2‐pentanoylfuran were key markers distinguishing ...

Organophotocatalytic Reduction of Benzenes to Cyclohexenes

open access: yesJournal of the American Chemical Society
The reduction of abundant benzene rings to scarce C(sp3)-rich motifs is invaluable for drug design as C(sp3) content is known to correlate with clinical success. Cyclohexenes are attractive targets as they can be rapidly elaborated into large product libraries and are stable against rearomatization.

Exploring Unspecific Peroxygenase Selectivity with Diverse Hydrocarbon Substrates

open access: yesChemistryOpen, EarlyView.
Unspecific peroxygenases (UPOs) are versatile enzymes that can be used for different reactions. However, selectivity of UPOs needs to be evaluated for the desired application. Thus, the selectivity of a panel of UPOs was evaluated in this work, and it revealed diverse reactivity profiles depending on the enzyme and substrate.

Challenges in Mechanistic Investigation of a Flexible Aminocatalyst as Demonstrated through Enamine Formation

open access: yesChemistryOpen, EarlyView.
The enamine formation catalyzed by a flexible asymmetric tripeptide is studied computationally. The catalyst's ability to reorganize plays a crucial role, enabling the reaction and providing multiple pathways for its occurrence. Furthermore, issues related to conformational search, method selection, and model system choices are discussed.

Development of a Vinylated Cyclic Allene: A Fleeting Strained Diene for the Diels–Alder Reaction

open access: yesAngewandte Chemie, Volume 137, Issue 33, August 11, 2025.
A strain‐promoted Diels–Alder reaction of the vinylated cyclic allene, a highly reactive strained all‐carbon diene, was developed. Activation of the Kobayashi‐type precursor with fluoride ion generated the vinyl cyclic allene, which was trapped by dienophiles to produce decalin derivatives under mild conditions.
