AbstractAn analytical procedure for the determination of dietary fibre in food is described. The method consists of an enzymic in vitro digestion with pepsin, pancreatin arid glucoamylase. Insoluble fibres are recovered by centrifuging and soluble fibres by precipitation with ethanol.
