Tannia Starch: Structural and Functional Characterization
Physicochemical characterization of crude and purified tannia starch revealed increased amylose content, higher pasting viscosity, and preserved A‐type crystallinity in the purified form. The findings highlight tannia starch as a promising functional ingredient for thermally processed foods and biodegradable material applications.
