Risk of Bacillus cereus growth and emetic toxin production in dried mushrooms

Abstract This experimental study investigates the occurrence of Bacillus cereus in dried mushrooms available on the Czech market and assesses the potential health risks associated with the production of the emetic toxin cereulide.
