Estimation of Effective Moisture Diffusivity in Starchy Materials Following Hydrothermal Treatments

Defect and Diffusion Forum, 2011
Two hydrothermal treatment processes (DV-HMT and DIC treatment) were investigated on standard maize starch for three processing temperatures; 100, 110 and 120°C. The gravimetric change of starch powder during the treatment was analyzed by a simultaneous water diffusion and starch reaction model. The effective diffusivity coefficient (Deff) and reaction

Microwave Heat Treatment of Spinach: Drying Kinetics and Effective Moisture Diffusivity

Drying Technology, 2007
The effect of microwave drying technique on moisture content, moisture ratio, drying rate, drying time, effective moisture diffusivity, and porosity of spinach (Spinacia oleracea L.) were investigated. By increasing the microwave output powers (180–900 W) and the sample amounts (25–100 g), the drying time decreased from 18 to 3.5 min and increased from

Moisture effects on isobutylene‐isoprene copolymer‐based composite barrier. I: Moisture diffusion and detection

Polymer Engineering & Science, 1996
AbstractExperiments have assessed how moisture and heat influence the functional and structural integrity of butyl rubber matrix composites used as protective barriers. This paper, which is first of a series, reports the findings on the subjects of moisture diffusion and its effect on ultrasonic wave propagation of composite barriers.

Effective Moisture Diffusivity in Porous Materials as a Function of Temperature and Moisture Content

Biotechnology Progress, 1990
AbstractRegular regime theory was used to evaluate the effective moisture diffusivity of a commercial white bread, plain sheet muffin, and baking powder biscuit as a function of moisture content based on desorption experiments. Volume shrinkage during drying was also monitored.

Prediction of the effective moisture diffusivity in gelatinized food systems

Journal of Food Engineering, 1993
Abstract Gelatinized food systems develop a porous structure during dehydration; therefore, the moisture diffusivity calculated from such experiments should be considered as an effective diffusion coefficient. In this work, the effective moisture diffusivity of gelatinized starches was determined from drying experiments using the method of slopes.

Effective moisture diffusivity of garlic cloves undergoing microwave-convective drying

Journal of Food Engineering, 2004
Abstract Drying of garlic cloves was done using microwave-convective technique, using microwave power of 10–40 W, air temperature of 40–70 °C and at air velocity of 1–2 m/s. The effective moisture diffusivity varied from 1.29 to 31.68 × 10 −10 m 2 /s. A third order polynomial relationship was found to correlate the effective moisture diffusivity ( D

Measurement of effective oxygen diffusivity in microporous media containing moisture

Heat Transfer—Asian Research, 2010
AbstractThe mass transfer characteristics of the gas diffusion layer (GDL) are closely related to the cell performance of a polymer electrolyte fuel cell (PEFC). The oxygen diffusivity of paper type porous media, which is generally used as a GDL, was measured with respect to its liquid water content using experimental apparatus consisting of an oxygen ...

The diffusion of moisture in food grains—II. Estimation of the effective diffusivity

Journal of Stored Products Research, 1991
Abstract In Part I Thorpe et al. (J. stored Prod. Res., 27, pp. 1–9, 1991) developed an equation that describes mass transfer by diffusion in bulk stored food grains. The equation is expressed in terms of an equilibrium weighted spatial average concentration and a volume averaged temperature, along with local spatial deviations from the average ...

Effective Moisture Diffusivity of Onion Slices undergoing Infrared Convective Drying

Biosystems Engineering, 2006
Drying experiments of onion slices (6 mm thickness) were carried out by using infrared convective drying. Infrared convective drying of onion slices was observed to be a falling rate process. The average effective moisture diffusivity of onion slices ranged between 0·2514×10−10 and 0·3233×10−10 m2 s−1.
