Detection of incubator reject eggs by differential scanning calorimetry
Food Research International, 1992Abstract A method to detect the presence of incubator reject (IR) eggs in fresh egg white by differential scanning calorimetry (DSC) was described. The transition temperature of denaturation ( T d ) of ovalbumin of fresh shell egg white was observed by DSC to be 83°C.

Electrophoretic Differentiation of Fresh and Incubator Reject Eggs
Canadian Institute of Food Technology Journal, 1968Abstract Polyacrylamide-urea-gel electrophoresis at pH 9.1–9.3 and 4.5 M urea showed consistent and reproducible differences in the protein patterns of fresh and incubator-reject eggs. The differences were observed in the ovalbumin and conalbumin regions and were caused by incubation at 37°C.
