Formation of Ethyl Carbamate in Umeshu (Plum Liqueur).

Samples of umeshu, a Japanese plum liqueur made from unripe plums, shochu and crystal sugar, were stored under fluorescent light, in the dark and in the refrigerator. The amount of ethyl carbamate formed in umeshu exposed to light or room temperature was larger than that in the dark or at low temperature.

Reaction of ethyl acetoacetate with p-toluenesulfonic acid: Formation of ethyl isodehydroacetate and/or ethyl p-toluenesulfonate.

Treatment of ethyl acetoacetate with anhydrous p-toluenesulfonic acid at room temperature led to ethyl isodehydroacetate (1) in high yield by acid-catalyzed condensation. On the other hand, in refluxing toluene, the unexpected ethyl ester of p-toluene-sulfonic acid (2) was formed in moderate yield.
