Centrifugally spun flaxseed gum/PEO fibers incorporating kale extract exhibited high encapsulation efficiency, enhanced antioxidant activity, and effectively delayed lipid oxidation, demonstrating their potential as sustainable active packaging materials for improving the oxidative stability of lipid‐rich foods.
