ABSTRACT Fruits from the Brazilian Cerrado, such as pitanga (Eugenia uniflora), jambolao (E. jambolana) and murta (E. punicifolia), are recognized for their nutritional and therapeutic potential, largely due to their phenolic‐rich profiles. However, systematic studies integrating high‐resolution mass spectrometry (HRMS) with chemometric tools to ...

ABSTRACT In oil‐in‐water emulsions, lipid oxidation begins at the interface between the two phases. One strategy to slow down this process is to place antioxidants at the interface, where they can directly block oxidative reactions. This study explored that idea by conjugating soluble faba bean protein with tannic acid using the free‐radical grafting ...

Limosilactobacillus mucosae maintained viability above 7 log CFU/g during storage of the fermented goat milk with inulin and Cereus jamacaru jam and survived over 4 log CFU/g during the in vitro gastrointestinal simulation. This jam enriched the total phenolic content of the fermented milk that achieved overall acceptability scores close to or above 7.

Algerian royal jelly from native honey bees shows chemical diversity influenced by geography and subspecies. Lyophilization preserves key compounds, including 10‐HDA and phenolics. Biological assays reveal modest antioxidant activity and selective cytotoxicity against Reh leukemia cells, while anti‐inflammatory effects are limited.
