Roasting‐Like Thermal Reconfiguration of Bioactive and Pigment Profiles in Pistachios From Distinct Geographical Origins

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
Dry roasting‐like treatment (140°C for 45 min) induces a significant compositional reconfiguration of (poly)phenols, pigments, and antioxidant capacity in pistachio kernels, strictly dependent on their geographical origin (Iran, Spain, USA, and Turkey), ultimately enhancing their functional quality.

Organ‐Dependent Antioxidant, Redox‐Modulating, and Lifespan Effects of Galanthus elwesii Extracts in Drosophila melanogaster

open access: yesFood Science &Nutrition, Volume 14, Issue 6, June 2026.
Aerial (leaves and flowers) and belowground (bulbs and roots) parts of Galanthus elwesii were extracted using water, 70% ethanol, and 80% methanol. Phytochemical analyses revealed organ‐ and solvent‐dependent variations in total phenolic and flavonoid contents, which were associated with differences in in vitro antioxidant activity determined by DPPH ...

Effects of Hydro‐Ethanolic Extract of Portulaca oleracea (Purslane) on Depression, Anxiety, and Stress Symptoms in Patients With Non‐Alcoholic Fatty Liver Disease: A Randomized Double‐Blind Controlled Trial

open access: yesHealth Science Reports, Volume 9, Issue 6, June 2026.
ABSTRACT Introduction Non‐alcoholic fatty liver disease (NAFLD) is a prevalent chronic liver condition globally. Managing anxiety, depression, and stress is crucial in NAFLD care. Preliminary hypotheses suggest that Portulaca oleracea extract may improve mental health by modulating stress‐related hormones.

Changes in phenolic profile, physicochemical properties and sensory attributes of steamed bread fortified with golden kiwifruit (Actinidia chinensis) flour during processing

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 8, Page 4576-4586, June 2026.
Abstract BACKGROUND Chinese steamed bread (CSB) is a traditional East Asian staple. Its texture and nutrition depend on the gluten and starch content of the wheat flour that it contains. Incorporation of golden kiwifruit, which is rich in dietary fiber, vitamin C, and phenolic antioxidants, offers a novel fortification strategy.

Combined effects of prohexadione‐calcium and growing environment on sweet cherry fruit quality and postharvest performance

open access: yesJournal of the Science of Food and Agriculture, Volume 106, Issue 8, Page 4901-4912, June 2026.
Abstract BACKGROUND Sweet cherry (Prunus avium L.) is a high‐value fruit crop, but its commercial success is often limited by poor pigmentation, reduced firmness, and short shelf life. This study evaluated the effects of preharvest applications of prohexadione‐calcium (1.5 L ha−1) on fruit quality and storage performance in lowland and hilly orchards ...
