Foram preparadas cinco formulações de hamburguer nas quais as variáveis se deram em função dos componentes: nitrato de sódio, nitrito de sódio e isolado protéico de soja. Foram analisadas também duas formulações adquiridas no mercado. Após tratamento em forno de microondas as amostras foram submetidas a análise do perfil da textura.
