AbstractThis study aimed to evaluate the efficiency of various mash acidification techniques in alcoholic fermentation for the production of apple spirit. Lachancea thermotolerans and Lactiplantibacillus plantarum strains were selected to conduct pre-fermentative acidification of the mash alongside a conventional chemical acidification approach.
