Antioxidants in Plant‐Based Food Matrices: From Structure–Activity and Degradation Kinetics to Formulation Design

open access: yesComprehensive Reviews in Food Science and Food Safety, Volume 25, Issue 4, July 2026.
ABSTRACT Plant‐based antioxidants are widely incorporated into foods to retard oxidative deterioration and to deliver health‐related benefits. Yet, their in‐product and in vivo performance frequently diverges from predictions based on solution‐phase chemical assays, because matrix interactions, processing history, and host metabolism reshape both ...

From Yield to Flavor: The Role of Lipid Coatings in Beef Aging

open access: yesJournal of Food Science, Volume 91, Issue 7, July 2026.
ABSTRACT Lipid‐coated aging has been proposed as an alternative to enhance flavor, particularly using butter as a coating material (butter‐aged beef). Thus, this study compared the wet‐aged and beef‐aged with different lipid‐based coatings: milk butter (butter‐aged), cocoa butter (cocoa‐aged), pork lard (lard‐aged), and beef tallow (tallow‐aged), all ...

Training in the Categorization of Aerial and Terrestrial Scenes Differentially Impacts Scene‐Selective and Nonscene‐Selective Regions in Occipitotemporal Cortex

open access: yesEuropean Journal of Neuroscience, Volume 64, Issue 1, July 2026.
The nature of neuroplasticity in the adult scene‐selective network is poorly understood. Training in categorization of unfamiliar (aerial) scenes results in specific changes to scene‐selective cortex and is predictive of behavioral improvements. We suggest that scene‐selective cortex is malleable and can support the learning of novel spatial geometries.

Worldwide Invasions of Centrarchidae: The Dark Side of the Sunfish Family

open access: yesFish and Fisheries, Volume 27, Issue 4, Page 781-812, July 2026.
ABSTRACT Freshwater fish invasions are major drivers of global ecological change, disrupting native biodiversity and ecosystem functions. However, many invasive fish hold significant socioeconomic value, resulting in conflict over their management. Centrarchidae, which are globally distributed and are important for sportfishing and aquaculture, are now
