`La France' pear fruits were harvested at weekly intervals for a 3-week period beginning Oct. 8, 1992, 1 week before commercial harvest. On the next day, fruits were stored at 20°C and 55%, 75% or 95% relative humidity (RH). Ethylene production, respiration rate and flesh firmness were determined at harvest and after intervals of storage.
